Cake time

It’s been 3 weeks since the new year’s resolutions kicked in, it’s not long till the end of the month. But the thoughts of something naughty to eat might be creeping in, the longer you stick your resolutions the more chance you have of them lasting.
So to help I have a recipe that tastes fantastic, but is full of ‘super foods’
- Base:
150grams walnuts
150grams cups raisins
- Filling:
1 peeled orange
Juice from 1 lemon
300grams cashews
100 grams Agave nectar or Honey
100 grams coconut oil
Pinch of salt
1/2 teaspoon vanilla extract
- Garnish:
Pomegranate seeds
To make the crust: Put walnuts into a food processor and blitz until it’s a fine powder. Then gradually add the raisins until the mixture sticks together. Press into the bottom of a lined 9 inch cake tin. Put in the fridge.
To make the cream cake: Blend all the ingredients until smooth. Taste and adjusting accordingly. Stir in a 1/2 cup of pomegranate seeds if you like, then pour onto your crust. Refrigerate overnight, or even better, 48 hours. Sprinkle with pomegranate seeds and serve! Quick and easy.
